On my way home from college today I deliberated about whether or not I needed to go to the shop to get something healthy to eat for my dinner and I concluded I didn’t. So once again, I made a meal from foods that I had in the kitchen that needed to be used. It was really nice though! It tasted like summer and it doesn’t feel like summer here, the mornings are so crisp now.
Avocado and Sweetcorn Salsa

- 1 avocado
- some cherry tomatoes
- 1/4 onion
- 1 small tin sweetcorn
- 1/2 lemon
- olive oil
- black pepper
- salt
Instructions
Chop up avocado, tomato, onion
Add sweetcorn, squeeze lemon over everything, drizzle olive oil over salad, add salt and pepper to taste
Notes
Apparently it’s best to slice tomatoes with a serrated knife because if it’s a smooth knife, apparently tomatoes can blunt the knife. Add black beans to make it a more wholesome meal, and to add protein
