Vegan Scones at Marché Vegan

I’m bringing my vegan scones to Waterloo’s Vegan Market next Saturday! They’re made using a traditional Irish recipe which I’ve adapted to make vegan.

When I live abroad, I tend to become patriotic. I find myself baking Irish soda bread, listening to Sinéad O’Connor and trying to use my cúpla focail here and there. That’s what brought me to bake my first batch of scones in 2013. They’re something my mother always baked at home and when I’m living abroad, I miss them. I miss their fluffy texture, the comforting warmth of a fresh scone just out of the oven and of course the ritual of sitting down to a cup of tea and a scone!

Last summer my mum and I experimented with the scone recipe we’ve always used to make it vegan. There were several substitutions to make, so I called upon all of my experience with vegan baking to develop my vegan scone recipe. Once we (my mum and I) were happy with the recipe, we began experimenting with different flavours. I was just back from a trip to Japan and obsessed with matcha, hence the vegan matcha scone was born. Irish baking meets Japanese tea ceremony! If you’re not a fan of matcha, I’ll also be making various traditional scones for the market.

Lo and behold, now living in Brussels, I’m taking part in a vegan market in Waterloo next weekend! It’s time to share our creations with the Belgian vegan community and I’m very excited about it! It will mean a very very early morning of baking next Saturday but I can hardly wait! I’m not too sure if most Belgian people are familiar with scones (are they known outside of Ireland and the UK?)  but hopefully they will be curious to find out more!

If you are in Brussels, come along to the market. It seems there is a huge variety of exhibitors/vendors and, in my opinion, it’s exciting to see a vegan event (similar to ones I’ve seen take place in Dublin) happening here in Belgium. Wish me luck!
